    In one of the most heartbreaking discoveries in Bourbon County, Kentucky, officials arrived at a farm to find 38 mares and 2 foals abandoned and left to die. The horses were suffering from severe starvation and dehydration, with many bearing injuries and clinging to life by a thread. Among them was Jo Jo’s Gypsy—a mare so close to death that rescue workers weren’t sure they could save her. But they knew they had to try.

    When veterinarians examined Gypsy, the diagnosis was grim. Her body had consumed an astounding 87% of her muscle mass just to generate the energy needed to survive. The vets initially called her “The walking skeleton,” a nickname that perfectly captured her skeletal appearance and fragile condition.

Penny Austin and One Horse at a Time stepped up to organize a fundraiser that would provide critical veterinary care, nutritious food, bedding, medicines, and other essential supplies for Gypsy and the other rescued horses.

    Though Gypsy could only walk for five minutes at a time during the early stages of recovery, the unconditional love from her young companion became the essential catalyst for healing. Day by day, week by week, Gypsy grew stronger. Her ribs gradually disappeared beneath muscle and flesh. Her coat transformed from dull and matted to shiny and vibrant. She blossomed from a walking skeleton into a beautiful, healthy horse.
